Meet Wendy Read of Sunchowder’s Emporia and watch her interactive demo.   Wendy will cover the basics of preparing a no pectin added Strawberry Jam from start to finish in the 1 1/2 hour introductory class.   She will prepare our jam two ways, one with fresh strawberries and balsamic vinegar, the second with a decadent Belgium Chocolate.  A jar of jam will be presented to each student along with recipe cards and handout for best practices in canning safety.   The class will focus on preparing the fruit, the role of sugar and acidity, the states of cooking and how to test for doneness when making fresh fruit preserves.   We will be serving a beautiful Italian Crostata which will feature the award winning Strawberry Preserves.  Please call the Olive Pantry at 407-732-7855 to reserve your spot.
